No-Carb Pesto Pasta

This has to be one of my favourite lunch time recipes.
It is incredibly easy and quick to make. And the bonus is it's incredibly healthy with no carbs in sight.
To serve 2 people you will need:
  • 2 courgettes
  • Pesto
  • 1 ball of Buffalo mozzarella
  • 1 red pepper (roasted)
  • Bacon (as much or as little as you want)
Oh, you'll also need a spiralizer  (I use this one)
Start by spiralizing the courgettes.



Then roughly tear up your mozzarella ball.

Fry up the bacon and red pepper.

Grab the pesto and add a few generous dollops to the spiralized courgettes.

If you have more time you could make the pesto yourself. (I'm far too lazy!)


Sprinkle the mozzarella, red pepper and bacon on top.

And then you're ready to serve.
