- 2 courgettes
- 1 ball of Buffalo mozzarella
- 1 red pepper (roasted)
- Bacon (as much or as little as you want)
Fry up the bacon and red pepper.
Grab the pesto and add a few generous dollops to the spiralized courgettes.
If you have more time you could make the pesto yourself. (I'm far too lazy!)
Sprinkle the mozzarella, red pepper and bacon on top.
And then you're ready to serve.
